In Judaism, the Hebrew word for these, "hamesh," relates to the five fingers of the human hand, and/or the 5 books of the Torah. It is also sometimes called Hand of Miriam, after Moses' sister.
In Islam it's called the Hand of Fatima in honor of one of Mohammed's daughter, and the five fingers are said to recall the 5 Pillars of Islam
Versions of it can be found in Hinduism, Christianity and Buddhism as well.
